Chef's Bio
Carlos Salazar was born in 1981 in Mexico City, Mexico. His love for cooking began in the kitchens of several French restaurants in his hometown, where he learned discipline, creativity, and the importance of flavor. One of his early experiences was working at the respected restaurant “Astrid y Gastón,” led by chef Gastón Acurio. This helped shape his passion for cooking and gave him a strong foundation.
With a clearer sense of who he wanted to become as a chef, Carlos later moved to New York City to continue growing. There, he worked in some of the city’s most praised restaurants, including “Casa Mono” by chef Mario Batali and “Dani García” by chef Dani García both known for their high standards and Michelin Guide recognition. These kitchens challenged him, inspired him, and pushed him to keep improving.
In 2015, thanks to his dedication and curiosity, Carlos became the head lead a chef a restaurant built on French cooking techniques. His work quickly stood out. Under his direction, the restaurant earned a Bib Gourmand award from the Michelin Guide and was named one of “New York City’s Five Best Lunches.”
Today, Carlos Salazar continues to cook with purpose. He creates dishes that not only taste good but also tell a story—bringing back memories, emotions, and flavors that people may have forgotten. His goal is to leave a personal mark through food, turning simple ingredients into moments people can feel and remember.
“My goal is to create dishes that feel rooted in place and memory—something elegant, seasonal, and deeply satisfying.”
